Roasted Pork with Jack Daniels Marinade

THE best pork roast you will ever have!

Serve with Creamy or Balsamic Slaw, and CaulisweetOmash.

(Please always assume we recommend organic)

NOTE: Prep-time: 1 hour. But needs to sit in marinade for a few hours minimum.

Ingredients:

1 pork roast
2 medium shallots 

1 tbsp brown sugar

Marinade:
1 cup Jack Daniels whiskey
3 sprigs rosemary
1 tsp course salt
1 tsp pepper
1/3 cup melted coconut oil
2 tbsp balsamic vinegar
**Whisk all the marinade ingredients these together, minus the sugar. 

Preheat oven to 300 C




1. Slice into pork roast (about 1/3 inch) with a sharp knife and place into bowl 




2. Pour marinade over roast, rub in.  **Let sit for as long as you can! I let mine sit in the marinade, turning often, for a minumum of 3 hours.




3. Heat a pan until super hot, to brown roast. Sear all sides until brown and crispy. NOTE: Open a window.



4. Place roast into a roasting pan that has a lid. Rub on the brown sugar, and place sliced/quartered shallots on top.

5. Roast in the oven, with lid on for 45 minutes to 1 hour depending on the size of the roast. (Our was 3 lbs. and took 45 on low)
**Continue to bast throughout, every 15 mins. or so.

6. Remove lid, turn oven up to 400 C and allow to sizzle and crisp-up for 15 minutes. 

7. Remove from oven. Allow to rest for 15 minutes before slicing.
